Red Pepper Bruschetta Brie
Yum is really the only way I can start this post. If you’re a cheese lover, specifically brie, you will love this recipe. It was originally my moms recipe and I need to give her the credit, but it has since been passed on to other friends because of how delicious and easy it is. One of my friends actually claimed it as her own recipe for bragging rights until I brought it to her bachelorette where she needed to eat her words and give credit where credit was due haha. But seriously, that’s how good it is people.
This is the perfect appetizer to bring with you to a potluck, girls night or special occasion. It can be eaten as an appetizer, late lunch, or midnight snack (I believe I mentioned bringing an appetizer to the MUST HAVES for the bachelorette) It is enjoyed at any time, and typically devoured by guests. My favourite side to pair it with for dipping is fresh French-style baguette, fresh pita that has been toasted in the oven, Ace baguette crisps, bagel chips or tortilla chips.
I first learned how to make this recipe while I was in University and it was a huge hit for all of our girls night. It makes me reminisce to when girls nights were actually just the ladies sipping martinis without a care in the world (except maybe who was making the next round) or in the summertime having mojitos on the deck with the brie, or even just catching up with a girlfriend over a glass of wine. There have been so many great stories shared and memories made while consuming this delicious brie. I hope you enjoy eating it as much as I do. I have also tried a few other varieties with mushrooms and onions and cranberries and herbs, but stay tuned for those ones. As you may have already figured out, this one is my favourite.
Medium Round of Brie
¼ cup Olive Oil
2 tbsps Dijon Mustard (good quality dijon)
2 Cloves of Garlic Minced or grated
2 tbsps of Fresh lemon juice
¼ cup of finely Chopped Fresh Parsley
½ Red Pepper Chopped
Chili Flakes or Hot Sauce (optional)
Fresh baguette, toasted pita, Ace Bakery Baguette Crisps, Bagel Chips or Tortilla Chips.
(Note: If you decide to make a larger brie, double your recipe or you will not have enough topping, if you love the topping you can use an entire pepper for the medium round also
Preheat oven to 350 F
In a medium size bowl, mix olive oil, mustard, lemon juice and garlic. Stir and adjust certain ingredients until you’re happy with the flavour (some like more garlic or more dijon, and depending on quality of mustard you may need more olive oil to smoothen it out). If you chose to add the spice element, add now.
Chop parsley and red pepper and combine with mustard mix.
Stir all ingredients together.
Place your brie in a brie baking dish or in a glass pie plate tented with aluminum foil.
Bake for 20 minutes until the brie looks ready to burst, if you poke with a fork, the brie should slowly leak out. Keep an eye so that you do not overbake it as this will result in all of your brie filling oozing out of the sides (it’s not as good for dipping and presentation).
Let cool for a few minutes, serve with one of the options above, enjoy!
